Grease is the general term for oil and fat. Generally, what is liquid at room temperature called oil, and what is solid called fat. The source of oil can be animals or plants. Vegetable oil is generally liquid at normal temperature and pressure, called oil, while animal fat is solid at room temperature and pressure, called fat. Grease is a mixture without a fixed boiling point. Grease is not only one of the main nutrients and food for human beings, but also an important industrial raw material. Edible grease mainly include edible vegetable oil, edible animal fat and edible oil products, oily seasonings and oil-rich products. As an important part of food quality and safety, the quality and processing safety of edible oil has been widely concerned.

On November 3, 2019, the State Administration for Market Supervision issued the《Guiding Opinions of the State Administration for Market Supervision on the Prevention and Control of the Risk of Plasticizer Contamination in Food》, which clearly stated that food producers and operators need to implement the main responsibility for food safety and strengthen food safety management to prevent and control the pollution risk of grease phthalate ester substances (commonly known as plasticizers), including the maximum residues in grease food of Di 2-Ethyl Hexyl (2-ethylhexyl) Phthalate (DEHP) and diisononyl phthalate (DINP) and dibutyl phthalate (DBP), which are 1.5 mg/kg, 9.0 mg/kg, and 0.3 mg/kg respectively; in addition, 《National food safety standard-Limits of contaminants in food》(GB 2762) has the limited value requirements of the heavy metals and benzo[a]pyrene in grease.
