Microbial contamination includes bacterial contamination, contamination by viruses, fungi and their toxins. As estimated by the World Health Organization, 70% of the hundreds of millions of food-borne disease patients in the world each year are caused by eating food and drinking water contaminated by various pathogenic microorganisms. Microbial food poisoning ranks first in the factors affecting food safety in China. Among microbial pollution, the bacterial pollution is the most extensive, the most influential and the most problematic one. In the food processing, storage, transportation and sales process, raw materials polluted by the environment, incomplete sterilization, improper storage and transportation methods, and careless hygienic operations. These are the main reasons that cause bacteria and pathogenic bacteria to exceed the standard.
