Project Background

Whenever a holiday is approaching, the special food during holidays will be popular in the market, such as sweet dumplings for Lantern Festival, Zongzi for Dragon Boat Festival, mooncakes for Mid-Autumn Festival and so on. China’s holiday food mainly have the following problems: microbial contamination during the production; excessive acid value and peroxide value caused by improper storage conditions; excessive preservatives in order to extend the shelf life of the product and other food additives that exceed the standard in order to obtain taste or the appearance of the product, etc. Consumers who eat food with excessive levels of microorganisms or food additives or even stale food will cause damage to the body, even may lead to food poisoning. The safety of holiday food is a common concern of the media and consumers.
