Meat, eggs and aquatic products are rich in protein, fat, vitamins, minerals, etc., and have high nutritional value. They are one of the main food sources for human beings. However, with the rapid development of social economy, the safety problems of these products have become increasingly prominent. There are many problems in breeding, production and sales links, which make China's food safety situation not optimistic. There are animal epidemics such as foot-and-mouth disease and avian flu, as well as illegal drug addition, food additive abuse, and excessive antibiotics and other problems in breeding and production links. These problems pose a serious threat to people's life, health and safety, and give us a warning of food safety.
Specifically, the main sources of safety problems of such products are as follows: 1. Hidden dangers in the breeding process: the environment of animal breeding is not up to standard, the illegal addition of drugs in the breeding feed, the poor control of animal diseases, and the irregular use of drugs; 2. Processing link: including small processing plant scale, poor processing level, and unqualified hygiene and other indicators; illegal use of food additives to pursue good colors; 3. Transportation links: transportation conditions are not up to standard.malachite green, ansipan and other drugs are illegally used during transportation; 4. Sales link: the facilities in the sales store are not arranged in place with a result to food spoilage; illegal vendors deliberately change the food that has exceeded the shelf life, etc.; 5. Consumption link: some consumers have poor consumption habits, and the food is not fully sterilized, cooked and eaten, or even some consumers consume the food directly as raw food, which can easily cause live bacteria to enter the human body and affect health.
