Meat adulteration means that illegal businesses will use relatively cheap meat such as duck and pork, and even use fox, mink and other animal meat products that have not been inspected and quarantined to impersonate meat of relatively high price meat such as mutton and beef in order to reduce costs. With the rapid development of China's food industry, there are more and more ways to adulterate food, and the means are becoming more and more sophisticated. The traditional sensory identification methods, such as color, smell and tissue properties, can not meet the needs of food safety management for the detection of meat and meat products, especially for some meat products added with pigments, aromatics or via deep processing, the reliability of sensory judgment is worse, and the animal derived components in the feed can not be distinguished by conventional sensory identification methods.

At present, DNA component detection is an effective means for authenticating the attributes of raw materials of meat products. The genomic DNA molecules of different species of animals will have certain differences in certain segments. By selecting these different gene segments as the target genes for detection, we can detect which animal or animal meat the product is made from. Since DNA is abundant and relatively stable in meat products, even if DNA is lost or broken into fragments during meat processing, the target gene used for detection will still be retained in certain DNA fragments, and finally be detected by PCR (Polymerase Chain Reaction) and other technical means to amplify the signal.

Laws and Regulations Basis

China has formulated and implemented a series of testing method for the identification of meat products based on DNA composition testing, such as: GB/T 38164-2019、SN/T 2051-2008, SN/T 3730 series, SN/T 3731 series, etc.
